Homemade Pasta and Sauce
So reverting a bit to Easter and my sadness of not being able to have the normal holiday- I had a need to make homemade pasta.
Usually I make homemade Lasagna, but this time I did not have all the necessary ingredients so I made fettucine and homemade sauce.
As a blessing, we got pork neckbones I made the ttraditional sauce starting with the pork neckbones in olive oil and garlic. After they are browned I added the San Marzano crushed tomatoes, more garlic, basil and oregano. 

Let that cooks for hours, the meat falls off the bones and the sauce is very flavorful! I made the handcut fettucini. The dough is so easy. I do cheat a bit and do it in the Kitchen Aid instead of by hand. But once it is mixed there is an element of doing it by hand.
Then you take the pieces and roll them through the pasta maker. Once the desired thickness- thicken then I make my lasagna noodles, you flour them and hand cut into strips.

There is nothing in this world like fresh pasta. It is so tasty and cooks so fast. This is a trdition that I want to continue and hope to teach my neice as well. I will admit this was not a married life event aside from my husband tasting the sauce, adding his 2 cents and enjoying the pasta.
Sometimes though just knowing you made something they enjoy is all that you need.
